Planted in 2003, this Pinot Grigio is grown from a single vineyard mountain block 300 meters (800 ft) above sea level. The soils are well drained, with large flysch fragments found throughout the surface. We harvested the grapes at optimum fruit set, and in low yields for a premium crop—roughly 1-1.5 kg of fruit/vine. The grapes were destemmed, crushed, and the juice was left in contact with the skins for 48 hours at ambient temperatures. Spontaneous fermentation via pied-de-cuve, with maturation exclusively in steel. Weekly bâtonnage and matured on fine lees. Roughly filtered prior to bottling. Certified organic.
