Grown from our steepest vineyard block ‘Patuce’, with soils consisting of pure rock ‘ponka’ flysch. The low yielding vines were picked by hand, and brought back to the winery to be chilled in cold refrigeration for 15 hours. The grapes were destemmed, crushed, and the juice was left to macerate on skins for four days. The wine was gently pressed, and left to ferment spontaneously via pied-de-cuve. The wine was aged on fine lees and matured exclusively in steel with bâtonnage. Roughly filtered prior to bottling. Certified organic.
